What: This is a good analogy. There are many people on the web who have made this association. The fats people eat, almost by definition, are not miscible with water. Think Italian Salad dressing as a common visible example of this situation. The fat phase needs to be emulsified. That is they need to be dissolved into little particles that can readily absorbed by intestines. The gallbladder secretes molecules that have similar physical properties to that of soap. They can turn a hug blob of fast into tiny spherical particles of emulsifier plus fat.
